Recipe for vegan stew with chickpeas

To prepare this vegan stew, you’ll need:
– 300 g potatoes
– 2 onions
– 4 large bell peppers (red, green, or yellow)
– 500 g cooked chickpeas
– 2 cans of tomatoes
– 2 cups of vegetable broth
– 2 teaspoons smoked paprika
– ½ teaspoon chili pepper (optional)
– 2 garlic cloves
Instructions for vegan chickpea stew:
Start by prepping all the ingredients. Wash and chop all the vegetables. In a skillet, sauté the chopped onions and crushed garlic. A stew isn’t a stew without a generous amount of bell peppers! So, add the peppers to the pan and cook until they begin to soften. Add the cooked chickpeas and pre-cooked, diced potatoes to the vegan stew. Be careful not to overcook the potatoes—they should retain their shape. This way, the stew will look appealing even before tasting!
